Oven baked eggplant


Eggplants/ Aubergine, depending on where you come from, was never my favorite thing as a child, I am surprised as to how much I like them as an adult. When I was in college my housemate used to make the tastiest, thickest curries and the secret ingredient was eggplants. At that time I never really tasted it as the flavor of the other ingredients like beef would take over. Then in 2015 on my first weight loss journey, I used to eat only salads and I visited a restaurant whose greek salad had slices of pan grilled eggplant, that was the moment I became an eggplant lover.

There are so many ways to make eggplants and with time I will be sharing some here and on my Youtube channel, For today I wanted to share with you this delicious oven-baked eggplant recipe, It was so delicious, Also note that you can blend it after baking it with a dash of Olive oil and you can get a very healthy dressing for your veggies.


  • 1 Eggplant
  • 2 Garlic Clove
  • Balsamic vinegar
  • Soy sauce
  • Olive oil
  • Salt
  • Black Pepper
  • Coriander
  • Spring/green onions
  • Chili peppers


  1. Preheat the oven to 400°F
  2. Cut the eggplant into sizeable pieces preferably 2 or 4 pieces vertically
  3. Make small incisions or small cuts on the eggplant and sprinkle salt on top to let the moisture come out and wait for about 30 minutes.
  4. In a small bowl, add Soy sauce, Olive oil, Black pepper, and balsamic vinegar.
  5. Cut the spring onion and coriander.
  6. After 30 minutes wipe the salt from the eggplant with a paper towel and brush the mixture on each eggplant.
  7. Put in the oven for 30 minutes at 400°F.
  8. After 30 minutes, Garnish the eggplants with the coriander and spring onion
  9. And the eggplants are ready
