Arugula is one of my favourite if not my favorite leafy salad. I like its salty and oniony taste because even if I love onions, I don’t have to add onions to the salad because it tastes great on its own.
That being said my love for berries is real and they are great antioxidants which makes them great to help with detoxing the body. That is why I had to make this recipe part of the 7- day sugar detox, to have something that is naturally sweetened to help curb sweet cravings and reboot your taste buds to crave healthy sweets as opposed to artificial sugars.
This salad is a great immune booster because of the different berries with their different help benefits. Blackberries are loaded with vitamin C and are an excellent source of both soluble and insoluble fiber, blueberries are a great superfood containing antioxidants and anti-inflammatory component which are said to help with some diseases like Alzheimer’s, diabetes, heart disease, and some types of cancer.
I also enjoy making foods, and salads that are so easy and so quick to make. This particular recipe is super easy all you have to make is the dressing and it literally takes only 2 minutes.
It is also perfect for meal preps but you have to make sure not mix the ingredients together, just make everything separately ahead of time and just mix it when you are ready to have it.
This salad can be altered in so many different ways by adding some feta cheese or grilled chicken and will still be healthy. I will share some of those recipes in the future, and if you feel like this won’t feel you up enough, I strongly advocate for intuitive eating because when you listen to your body you are able to avoid binge eating which many people suffer from as a result of denying your body what it wants.
VERY BERRY ARUGULA SALAD
- 1/4 cup of blueberries
- 1/4 cup of halved blackberries
- 1/4 cup of halved strawberries
- 2 cups of arugula
- 1/4 cup of walnuts
For the dressing
- 1 tablespoon of olive oil
- 1 tablespoon of honey
- Juice of 1/2 a lemon
- A pinch of cayenne pepper
- Salt and pepper
- Cut the strawberries and blackberries into halves.
- Make the dressing by add all the ingredients in a bowl with a lid and shake or just whisk until everything is mixed together.
- Put the arugula in a bowl, then the berries, pour the dressing on top and mix the salad with a spoon to make sure the dressing is everywhere.
- Top the salad off with walnuts.
Nuts help to add texture to the salad which I particularly like and helps take the salad to a whole new level.
